Why Diversification is the New Resilience
For nearly three decades, we have watched the hospitality supply chain evolve, but 2026 marks a structural shift. The industry has moved beyond the “vegan boom” into a more nuanced era: The Era of Selective Sourcing.
The UPF Backlash and the Return to ‘Real’
The most significant shift this year is the consumer rejection of highly engineered plant-based substitutes. Data from the British Medical Journal recently highlighted that 57% of UK calories now come from Ultra-Processed Foods (UPFs). For the hospitality guest, a meal out is increasingly seen as an escape from this “industrial” diet.

By moving to Blended Proteins—formats that combine whole-cut meats with mushrooms, lentils, or grains—operators satisfy the “flexitarian” majority (now representing 74% of occasional diners) while avoiding the “overly processed” label that is currently hurting the imitation-meat market.

The Economic Case for Aquaculture
With Foodservice Price inflation set to hit highs of between 5.7% and 7.3% in 2026, finding “low-impact, high-yield” proteins is critical. UK aquaculture is no longer just about salmon. Species like mussels and oysters represent a unique hedge against inflation. Because they are extractive (filtering nutrients from the sea rather than eating grain), their cost of production is disconnected from the volatile global soy and corn markets.

The Regenerative Reality
Regenerative farming is no longer a niche marketing term; it is a risk management strategy. Regenerative systems are inherently more resilient to the extreme weather patterns disrupting traditional “industrial” farming yields. While the unit price may be slightly higher, the supply security and brand loyalty among the 33% of UK adults now on long-term health regimes justify the investment.

At Prestige, we believe a resilient business is one that isn’t dependent on a single, volatile commodity. The 2026 menu must be a “barbell” of high-quality, ethically sourced regenerative meats balanced by high-margin, innovative aquaculture and blended protein dishes.
